Chef, restaurateur, entrepreneur and teacher with decades of experience, Chef Gentieu’s professional record is both varied and deep. An honors graduate of the Culinary Institute of America, he also served with the U.S. Army as a chef for two three-star generals. He has owned and operated five restaurants and spent the ’90s in a number of Executive Chef and management positions at restaurants, resorts and clubs throughout Central California. Currently Chef Gentieu and his wife, Midge, own and operate Papagallo Yacht Charters in Morro Bay, California.
I began working in restaurants before graduating from high school and discovered I didn’t just like cooking , I was good at it. I also discovered that in this line of work you could eat what you wanted when you wanted to, work with lots of pretty girls (all of the servers were girls then) and you got paid for doing it. To an adolescent, what could be better?
It was only much later that I realized my path through life was as
much internal as external, and that the destination mattered less than the trip itself. “We are who we are from the cradle and we’re stuck with it, “Steven Pressfield writes in The War of Art. ” Our job, in this lifetime, is not to shape ourselves into some ideal we imagine we ought to be but to find out who we already are and become it.” I was born to be a cook and a yacht owner and my life has been a journey to becoming just that.
Through my posts, I would like to share how menus are developed on the yacht that would include: private charters, wine pairings and buffets. I will also offer up some of my favorite recipes and throw in a few interesting food facts. Use this blog as a resource. Expand your knowledge about food and to inspire you to create special events of your own.
